Easter Prep

Easter is this weekend! Even though it's just the E and me, I still want to have a special dinner (in front of the TV).
I found this fab menu idea by Cat Cora. Look out- food porn ahead!



(Do I want to make it because it has the word "butt" in it- maybe). Maybe we'll do honey baked ham too. I don't particularly like ham, but it feels traditional.
 


I really need to be "healthy" especially after these last two vacations,but something about a homemade cherry pie (a la mode of course) sounds so right for Easter. Muumuus come in pastels right?

I would love to decorate, but let's face it, I don't have the room to store anymore holiday decorations since my Christmas crap is already falling out of our storage closet.

Growing Up


This past weekend (and then some), I was in my hometown, Knoxville, TN.

I was helping my mom with her garage sale. Of course, I packed a bunch of my crap treasures into a large suitcase and made me some moolah too.
Part of coming home included me sorting through all of my stuff stored at my personal storage unit (aka my parents’ house). My mom was quite devious in how she got me motivated:  “why don’t you go though all these boxes upstairs in your room, there might be stuff in there you want to sell. You could make a lot of money at the garage sale.”
Anyway, my parents saved EVERYTHING I ever made. I mean there were boxes of drawings, stories, and pictures. Halfway through, I realized that I was a WEIRD kid.

I had a photo album filled with  picture with my guinea pig (most of them were in costume). The above photo was my "thug life" pose. Because you know, nothing says Compton like a guinea pig. My stories and drawings were up there with the stories of a ridiculous strung out junkie. I guess I was "creative".

I also realized how good I had it as a kid, and why the heck didn’t I realize and appreciate it when I was younger?!

Anyhoo, I also spent some QT with my lil’ bro which pretty much just included ice cream and sushi jaunts. I also realize I shouldn’t eat as much as a 30 year old man or the scale will not be kind when I get back home.
Speaking of the scale, the Easter bunny visited me at my parent’s house and then again when I got back home to the hubs. Wow- the people that love me sure know what I like. Chocolate.

Spring Week: Recipes


What a fun Spring week this has been- thanks to all these bloggers for giving me something to write about this week!

So, onto the final theme of Spring recipes. I love using fresh fruits and veggies in my spring cooking.
I Google searched "in season fruits and veggies spring" (and removed nasty tasting veg & weird things like fiddleheads?)

Apricots Artichokes Arugula Asparagus Beets Carrots
Chard Cherries Fava beans Grapefruit Scallions Kiwis
Kumquats Leeks Lemons Lettuce Mint Navel oranges
New Potatoes Parsley Peas Radishes Spinach Strawberries

Here two of my favorite recipes that E found that I love to eat. Bonus, they incorporate some in-season vegetables and are fresh & light to enjoy in the warmer weather. 
  1. Shrimp tacos
  2.  Salmon, asparagus, and orzo salad


I also love, love, love overnight oats!
Currently, I’m doing, ½ cup oats, ½ cup unsweetened applesauce, ½ cup almond milk, 1 T. chia seeds, cinnamon, nutmeg, and agave nectar.

I definitely want to try some new variations for the Spring, like this PB&J. The chilled oat concoctions are great for warm mornings.

I also enjoy any kind of fruit & kale or spinach smoothie hen it's warm.
So, enough of the healthy stuff, 'cause you KNOW I dig on some sweets.


For Easter, I am dying to try these Cadbury egg cookie cake bars. You also can't go wrong with a homemade pie.

Spring Week: DIY

I LOVE to be crafty, but often find I don’t have the space to store my crafts and have to buy a bunch of supplies that I end up tossing after using once (or never!)
Maybe once we have kids, I’ll be more gung-ho about crafts :)

I really love holiday wreaths, and have visions of my front porch with a festive wreath for each season. Realistically, I only hang a Christmas wreath.

Spring Week: Cleaning Tips & Tricks

My momma has a whole bag full of spring cleaning tips & tricks (which is where I get them from).

Here's what I have found most useful:

  • Use olive oil to clean and shine your stainless steel kitchen appliances.

  • Kitchen gloves are great for picking up animal hair from couches or carpeted stairs.

  • Throw a lemon slice down the garbage disposal and run it to get your sink smelling fresh.

  • If you're pressed for time (or just lazy like me), use dirty towels to wipe up the bathroom floor and counters before you throw them in the laundry.

Every good housekeeper has a stash of their most loved cleaning products. I always use these: 

  • Clorox wipes (duh)

  • Swiffer wet wipes

  • Mr. Clean magic eraser

And when you're all done cleaning, you need a lavender vanilla candle (or any other scent you enjoy) to relax to!

Spring Week: Spring Fashions

Today is Spring Fashion & I can’t wait! I actually have tan legs thanks to a timely beach vacation. I love wearing skirts with no tights, flip flops and open toed sandals with a colorful pedicure.

My #1 for this Spring is MINT!
I can't wait to wear my new mint capris to work with a black blazer or on the weekends with a graphic t-shirt.

I will also be wearing (or shopping for):
  • Tie-Dye (not the tacky overly colorful kind)
  •  Something sheer

  • Maxi skirt with ballet flats   
  • Chambray button down

A few weekends ago, I tried out some spring trends (when the weather was warmer).
Get yourself a foam doughnut at Sally Beauty Supply for a bangin' top knot and this fab mint nail polish to mix n’ match your nails.

Spring Week: Spring Bucket List

Even though it's SNOWING in DC, I am pressing on towards Spring. I have been super excited for this link up!

When the warm weather starts to appear, here's what I intend to do:
  1. Go to a baseball game
  2. Wake up early and see the cherry blossoms 
  3. Eat fro- yo while walking outside
  4. Go to a BBQ festival (or just eat BBQ if we can’t find a festival)
  5. Rent bikes and ride into DC and around the National Mall 
  6. Run outside

Pi Day Celebration

I'm telling you, the Devil works in my office.
We celebrated our March birthdays with this amazing cake:
My co-worker and her sister are professionals - their bakery in Maryland (Itsy Bitsy Bakery) is going to be famous I tell you!

Followed by the main course (8 or so different pies): 

I made this Apple Crumble with one of my co-workers last night (her mom's secret recipe). I now know the secret, but I'm taking it to the grave! 
I dare say it was the best pie today.
